This wine is sometimes gold with emerald highlights, sometimes pale straw color. Its nose is flowery and light-hearted. Its bouquet frequently evokes butter and brioche with notes of lemon, grapefruit, and occasionally a touch of minerality. A lively attack helps to make this a clean, straightforward wine -- quite fleshy, persistent, and occasionally with a touch of spice.
Vinification : After pressing, the juice is cooled to 10°C and allowed to settle for 24 hours. The must is then put in small oak barrels – of which 25% are new -- by gravity for a slow, low-temperature fermentation. The lies are stirred every 10 days or so until the secondary (malolactic) fermentation is completed. The wine is matured for 18-20 months, then carefully racked off for bottling unfined and unfiltered.
